Buttery chocolate cake filled with lashings of cream and topped with gooey chocolate icing…. YUM, I was really looking forward to this one!!! Obviously I don’t consume a large amount of my cooking or I’d be as big as a house but I definitely have to taste test it! Jeff’s putting on some weight though… hehe!
My Dad taste tested this one and informed me it was the best chocolate cake he’s ever tasted! The texture of this cake is quite unique however I blame the buttermilk for this. I do have a few tips for this cake to make it look a little more professional than my attempt.
• To make buttermilk just add a teaspoon of lemon juice to 1 cup of milk or you’ll find it in the cream section at the supermarket.
• Once you’ve put the cream in the middle pop on the top cake and put it in the fridge until the cream sets. I tried to put the icing on top and the layers kept sliding off cause the cream was at room temp.
• NEVER EVER put cream or icing on your cake until it is completely cooled. It wouldn’t hurt to put your cakes in the fridge so they are nice and cold too.
Don’t be put off by this recipe because there are a few extra steps and two fillings to make. It’s super yummy and will serve lots of people because it’s so rich.
